Posting early due to work.Layered eggplant slices: breaded eggplant (panko), then a layer of mozzarella, ground sausage; next up is sundried tomato-olive pesto, then chopped tomatoes cooked in the same pan. Chiffonade of basil and grated parmesan over the top.
Tossed green salad with a variety of greens and balsamic dressing.
No-sugar coke to drink.
Dessert: somethin'. Just don't know what yet. Might pick up something on the way home from work.

(1,800 posts)My container-grown tomatoes have mostly been billiard ball size or a little smaller, but they were perfect in this.
Best part was, our weeknight chef (son) made it, so I could come home from work and just enjoy it!

I do believe you were the C & B poster who once opined that you could just have goat cheese as your protein for the rest of your life. That was you?--did I remember correctly?
Who found the recipe? You or your son?

(1,800 posts)I'm still the weekly menu maker, but he does look at cooking magazines and provides input.
I do love goat cheese, but my "desert island food" would probably be potatoes.
