Nectarine-Mango Pie

Fresh outta the oven



After cooling



Ala mode



Nectarines were what I had, they were getting pretty ripe... Peaches would've been just fine too.

Peach Mango Pie

Crust

2 2/3 c flour (12 oz)
1/2 tsp salt
1 c butter, chilled & cubed
1 Tbsp white vinegar
About 5 Tbsp ice water
1 Tbsp sugar

Filling

1/4 c sugar
1/2 c brown sugar
3 Tbsp cornstarch (or flour)
1 Tbsp water
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
3 c peaches/nectarines
3 c mangoes
2 tsp lime juice
1/2 tsp salt
2 T butter (to dot)

Bake at 375F for 50-55 min

P.S. An odd number of strips works the best for lattice, I have found. Use every other strip in one direction, then the rest in the cross-wise direction. I did an egg wash on the crust (including the bottom, supposedly that helps prevent a soggy crust) plus coarse sugar.

i dont hate it, there’s a knack. but i sure wish i could pop an attachment on my kitchenaid and at least peel them, like i can do w apples, etc.

fine for 1 or 2 to eat. but after that, it’s fussy.
like, i know someone who lived in fla for a while and had a big tree. he made mango chutney and jam by the ton. didnt ask how he did it, but i should.
