On Netflex: High on the Hog, How African American Cuisine Transformed America.

I have just watched the first episode, but what an education.
I would like to make at least this 50 minutes required in all schools. Junior high or senior high children need to understand that the "great southern food" is what the enslaved women and men cooked because seeds were brought from Africa and the enslaved people knew how to cook with it.
