uBlock Origin - filter lists and advanced features
uBlock Origin is the go-to extension for blocking ads, in my opinion.
Not for Safari, but I'm using it on Firefox for mac.

Some things, like cookie banners, aren't blocked by default. To block them, you have to select additional lists in the Filter lists pane.
The lists mentioned below are crafted carefully and seldom cause problems. If you suspect uBlock Origin is hiding something important, use the "No cosmetic filtering" toggle. The ⏻ Power button disables uBlock Origin altogether for the current website.
The extension also offers a logger that tells you what filters are being applied to each website. To report broken websites or ads directly to the uBlock Origin project, use the 💬 Report an issue button.

Edit: I also use Privacy Badger by EFF and Clean URLs. I think you and I have both mentioned Cory Doctorow, and he recommends all these tools. EFF has a terrific Surveillance Self Defense help file that mentions these and similar tools.

Every now and then I need to tweak a thing or two to see something, but for the most part, I'm pretty comfortable with the layers of redundancy.

There were never any problems as far as I know - out of sight, out of mind. Your post will have me exploring some of these features.
