Why Everyone Loves This Ethiopian Fried Chicken in D.C. -- The Experts

I've tried Chef Tadesse's fried chicken at his other restaurant, Melange. It's quite good if you like Ethiopian spices and flavors. This is a good spot to eat in DC near Howard University where you are unlikely to encounter any MAGA tourists.

... I do try to use local roasters and local herbalists. This chicken would go over very well here in the Hill Country of central Texas. I imagine our weather and geography is similar to some parts of Ethiopia.

all very flavorful with their own special spices and marinades and brines. We have a Hispanic market here in Virginia that makes good spicy fried chicken.
